Do you have a regular spot where you operate from and serve daily meals?
After 4.5 years of running a brick and mortar restaurant, Garden Song Eco Cafe, we decided we wanted the freedom and flexibility to bring our eclectic high vibe offerings to various locations in the New River Valley. We now cater to both Private and Public event. For more information, please check our “Events Schedule”.
How big is Giggles? How much space does she need to set up?
Our fully expanded gig takes up a 44ft X 20ft space. This includes outdoor seating set up in front of the bus, our side steps and our merch booth open for all curious shoppers. Without any seats or merchandise booth set up, it could fit in a 44ft X 10ft space.
How many people can you seat in your seating area?
Giggles LOVES its guests and wants everyone to be comfortable! It welcomes you to make yourself at home under its canopy surrounded by cozy string lights. We offer 12 individual seats with 3 tables.

We sure do! Although not large enough for a very large crowd, we can provide an eclectic and tasteful musical experience for a crowd up to 500 people. You are also welcome to provide us with your favorite playlist for use during your event.

ABOUT OUR MENU
PALEO - GLUTEN FREE - VEGETARIAN/VEGAN - ORGANIC - NON GMO
WILD CRAFTED - SUSTAINABLE - ECO FRIENDLY - FARM TO BUS
WILD CRAFTED - SUSTAINABLE - ECO FRIENDLY - FARM TO BUS
Our Menu was designed to integrate the best qualities of the healthiest diets both for our bodies and spiritual growth and the environment. Creating such a Menu wasn’t easy as some foods that our ancestors may have eaten are no longer readily available in the wild and do not contain the same nutritional value. Ancestral diets varied greatly based on location and what was available in the immediate environment. That said, our Menu does encompass ancestral staples from a wide range of countries reflecting the owner, Maya Ittah’s personal cultural heritage (visit our Events Schedule page for more info about our themed nights).
Is your Menu 100% Paleo?
Our menu is primarily Paleo, however we may at times serve other plant based foods that may not traditionally be included in a strict Paleolithic diet, but contribute to a balanced plant based ancestral diet. These foods may include quinoa and other such pseudo grains and ingredients we may not be able to find paleo replacements for in special cultural dishes. We will note in our menu if any such ingredients are contained. Is Paleo always Gluten Free? YES, a paleo diet actually consists of no grains where gluten is typically found. Does Paleo mean dairy free? YES, our Paleolithic ancestors did not raise cattle in order to acquire milk from female mammals. Instead they relied on what they could readily find in the wild without the need for domesticating animals. Are you menu items WHOLE 30 friendly? YES, the majority of our menu items are Whole 30 friendly which we have indicated with the abbreviation “W30”. If you do not see this abbreviation on a menu item, that means that this item contains 1 or more non whole 30 friendly ingredients. What type of sweeteners are considered paleo and why? The following list includes sugars that can naturally be found in nature and tend to be found lower on the glycemic index which helps us maintain healthier blood sugar levels as well as steady insulin production.

I heard Paleo is a high meat diet, how can you be paleo and vegan as well?
Although Paleo is commonly associated with high meat consumption, it is a misconception that our ancestors lived as primarily carnivorous creatures. On the other hand, it was found that their diet included various wild fruits, plants, insects, small animals and at times larger game meat. It has been found that the diet best suited for most individuals is one similarly varied and filled with the wild diversity nature offers. Whether one feels more drawn to consume animal protein over plant based protein strongly depends on one’s lifestyle, metabolism, physiology and ancestry. Giggles’s main goal is to offer a variety of organic, plant-based, Paleo options that support most dietary plans. We strive to offer high vibration foods supportive to spiritual growth and awakening and therefore have chosen not to offer meat products. Please feel free to ask us personally is you have any further questions! A vegan paleo diet, however, doesn’t contain any of these animal products. Whilst it has a similar focus on fresh fruit and vegetables, it also includes certain grains to broaden its nutritional value; quinoa, amaranth, and buckwheat are all low-carb, high-protein options that can be incorporated into a vegan paleo diet. Where it doesn't contain meat, dairy and eggs (the paleo part), to follow healthily as a vegan, these are substituted with certain grains (normally excluded in a paleo diet). |

List of paleo vegan foods:
Leafy Greens + non-starchy Veg
As a Clinical Nutritionist I have studied a variety of dietary plans from the highly touted Mediterranean Diet to the Keto trend, however, in attempt to marry the best of all worlds, I finally landed on Paleo Vegan. I want a Menu that was entirely Gluten free and Paleo being grain free, fit that requirement. I also wanted a dairy free Menu which is also supported by the Paleo diet as mentioned above. Why Plant based? Our Menu is largely Vegan but some items do contain eggs or honey which are not vegan. This choice was made in order to provide food that anyone, vegans or meat eaters, can enjoy. We are not claiming that a plant based diet is best for everyone's physical health as animal products sourced from humanely raised farms, without hormones and antibiotics can be an acceptable source of protein. As meat products are available in most restaurants and mobile food trucks, we want to offer other creative high vibe options for those wanting to try something different.
Do you as the owner follow a strict Paleo Vegan diet?
I often get asked the question about whether I follow the same diet as I choose to serve at my restaurant and the answer is no, not always. I have gone through periods of my life during which I followed a strict vegan diet, I have mainly followed a vegetarian diet during my adult life but have also experimented with including some meats into my diet for periods of time to see how these changes would affect my personal health. I have found that for highest spiritual attunement, consuming a plant based vegan diet with intermittent fasting or complete fasting has been the most successful. However, during times of increased athletic performance, a diet higher in protein, fats and carbohydrates works better to sustain my energy. I have found that doing regular cleansing, fasts and purification practices help support a deeper spiritual practice and I can follow a heartier whole foods diet the rest of the time. Our Menu supports most walks of life and dietary preferences but one may choose to supplement you Giggles meals by adding animal protein or you may be during a period of cleanse and just enjoy our 100% organic smoothies.

Can you eat nuts on the paleo diet?
Absolutely, but practice moderation. Nuts and seeds have been here before humans ever existed, so it’s safe to say that early humans had nuts as part of their diet. We’ve been scrounging through bushes and picking trees since day one. With this in mind, nuts are certainly paleo. Although we try to minimize our use of nuts in our menu to cater to nut allergies, nuts are an integral part of a vegan paleo diet, necessary to replace any animal protein our ancestors may have stumbled upon as a food source. The master list of paleo diet nuts. Okay! Now let’s go over all of your options.
