We have completed the install of one of the main pieces of our mobile kitchen! I am not gonna lie, I was pretty nervous to have such a huge hole be cut into the bus and thanks to some incredibly skillful helpers, it all went without a hitch! So grateful for this big step forward!

As we enter our last month in operation as Garden Song Eco Cafe at 808 5th Street SW, the work on converting our new home on wheels continues! My hope is to complete the bus conversion by the end of June and start booking gigs beginning mid-end of July! My goal is to operate Giggles throughout the year attending larger events and gatherings as well as cater private parties in our local area. If you are interested in booking Giggles in July or later, please contact us at events@gigglesthebus.com. Today is a delightful snow day and wifi connection has been spotty here on the Homestead. I spent the day yesterday preparing the bus and outbuildings for the storm and can now spend some time resting by a warm fire in our woodstove. Today, I also spent some time checking in on my progress converting my 2001 school bus into my future gig on wheels. Before the storm, I started insulating the floor of the bus with Havelock Wool and laying the plywood 23/32 OSB subfloor. I am still awaiting to receive the metal window deletes and 1 flooring strip from Floyd Metal Work. I need to wait to get this order before I can really start framing the side walls. I have already cut the 2x4 studs so they are ready to go as soon as I get the window pans. I am also waiting to receive both the concession window and the kitchen flooring which I intend to lay down before putting holes through the floor to install plumbing lines (I need to find a plumber who would be willing to work on this project!)
I did find an electrician though, Aaron Terry, who will be installing all electrical on the bus, but we both need to do some research before beginning that process. This process will be quite involved as the electrical component are fairly complex ranging from outlets, lights and speakers to AC unit, Heater and solar set up. It may take several days to set all that up, but I am looking forward to it! It is such an important part of this gig bus! In addition to physically working on the bus conversion, I am also spending a significant amount of time creating the bus Menu and determining the Transformational Healing Sessions that will be offered in the Private Room. So far, have decided that I want the Menu to remain plant-based as in Garden Song Eco Cafe, however, I would like to also make it grain-free (not just gluten free), dairy free (which it pretty much is now), and still ORGANIC! My goal is to find a variety of delicious Paleo Vegetarian sweet and savory recipes. Here is my current write up about Giggles Menu: "Our Menu is designed to integrate the best qualities of the healthiest diets both for our bodies and spiritual growth and the environment. Creating such a Menu isn’t easy as some foods that our ancestors may have eaten are no longer readily available in the wild and do not contain the same nutritional value. Ancestral diets varied greatly based on location and what was available in the immediate environment. That said, our Menu does encompass ancestral staples from a wide range of countries reflecting the owner, Maya Ittah’s personal cultural heritage.
